- Marinate mutton with curd,ginger,garlic paste,green chilli and raw papaya paste,1/2 tsp salt,turmeric powder,2 tbsp mustard oil for 2 hrs or preferably overnight..
- Heat 2 tbsp oil and ghee in pressure cooker.Sprinkle half crushed black pepper,cardamom,cinnamon and cloves.When they splutter,add chopped onion and fry golden brown.Add onion paste and fry.Add the marinated mutton.Then add tomato puree,salt,coriander powder,kashmiri red chilli powder,little sugar and fry till oil leaves sides and a nice aroma releases.Add 2 glass warm water and pressure cook 5 to 6 whistles.Let the steam release by itself..
- Check whether mutton is cooked properly and soft.Sprinkle a pinch of jaifal and raisin paste.When the mutton releases oil,add coconut milk and boil.Add 1 tsp ghee and garnish with chopped coriander..
