Mutton Roghan josh instructions
- First of all marinade meat with 3/4 salt and lemon atleast 2 hours or preferably over night and then prepare all ingredients.
- Then in a pressure cooker or a deep bottom pan....add in oil and add all whole garam masala....cook on slow flame until aroma comes in oil....then discard these whole spices.....
- Now add in sliced onion and whole cummin seeds...and fry onions until golden brown.....
- While onions will be fried add ginger garlic paste and turmeric powder, both chillies powder... coriander powder...stir for few seconds.....
- Now add in meat and bhoonofy until evaporates extra water of meat....
- Now add yoghurt and tomato puree and bhoonofy for 2 to 3 minutes and mix well.
- Now add hot water and 1/4 tsp salt for gravy in it and leave on steam until tender.. approximately for 20 to 30...I cooked in pressure cooker for 20 minutes or depends on meat quality......
