Recipe: Tasty Mutton Paya

Mutton Paya. Mutton Paya is a stew like, rich, spicy, runny curry that's cooked with goat trotters or lamb trotters with a special blend of spices. Goat Paya is best enjoyed with piping hot white rice, Naan or Chapathi. The goat trotters or goat hooves are traditionally slow cooked to make an awesome bowl of mutton paya curry.

Ingredients of Mutton Paya

  1. Prepare 1 kg of Mutton leg pieces(cut in small pieces).
  2. You need 2 of bog Onion sliced.
  3. Prepare 1 tbsp of Ginger-Garlic paste.
  4. You need 1 of big chopped Tomato.
  5. Prepare 1 tablespoon of kashmiri red Chilli powder.
  6. Prepare 1 tablespoon of Coriander powder.
  7. Prepare 2 teaspoon of Garam Masala powder (homemade).
  8. It's 1 teaspoon of Cumin powder.
  9. Prepare 1/4 tsp of Fennel(Saunf) powder.
  10. It's 1/4 tsp of Carom seed(Ajwain) powder.
  11. You need 1/2 teaspoon of Turmeric powder.
  12. You need 2-3 of whole green Cardamom.
  13. Prepare 2 inch of long Cinnamon stick.
  14. It's 6-7 of whole Black pepper corn.
  15. Prepare 2 tablespoon of Mustard oil (or any cooking oil).
  16. Prepare to taste of Salt.

I have stopped trying out different paya recipes ever since she has given me this one. Mutton Paya Soup, which is made from the legs of a lamb or trotters, is one of the healthiest soups that you will ever have in your lifetime. Mutton Paya step by step

  1. Take fresh good quality mutton leg small pieces..
  2. Heat 2 tbsp mustard oil or any type of cooking oil in a big pressure cooker. Add in sliced onion and cook until onion becomes light golden brown..
  3. Also add in whole garam masala like cinnamon,cardamom and black peppers..
  4. Saute for a couple of seconds and then add in ginger-garlic paste..
  5. Add in chopped tomato and saute for 2-3 minutes until tomatoes become soft..
  6. Next all the spices and salt, mix well and saute for few minutes until the mixture becomes mushy and oil starts separating from the spices..
  7. Add in mutton pieces and saute further 5-6 minutes. Sprinkle little water to avoid burning of spices..
  8. Add in sufficient hot water(approximately 2 l) to the cooker and then close the lid..
  9. Cook in high heat until 2 whisles and then reduce the heat to medium low and cook for about 2 and 1/2 hour..
  10. After 2&1/2 hours later switch off the flame. Wait to release steam in itself. Delicious and nutritious mutton paya is ready now. The gravy should be very thin in consistency..
  11. Serve hot with bread or any kind of rote, naan etc..
  12. Note: If you cook in saucepan then cook in medium low heat for 3&1/2 to 4 hours..
