Ingredients of Kashmiri Mutton Rogan Josh
- You need 1 Kg of Mutton.
- Prepare 800 gms of Onions.
- You need 1 cup of Mutton Stock.
- It's 1 Teaspoon of Ginger Garlic Paste.
- You need as per taste of Salt.
- It's 400 ml of water.
- You need 1 Teaspoon of Chilli Powder.
- You need 2 Teaspoon of Kashmiri chilli Powder.
- Prepare 1 Teaspoon of Dhania Jeera Powder.
- Prepare 1 Teaspoon of ginger powder.
- Prepare 1/2 Teaspoon of Asafoetida powder.
- You need 5 Teaspoon of Curd.
- It's - 4 pc of cloves,.

- Prepare 1 of cardamom sticks.

- Prepare 1 Teaspoon of jeera & Saunf - Grind it in mixer.

Heat oil in a wide heavy bottom skillet. Once onion are brown, add whole spices (or garam masala. - Make Mutton Stock.
- Grind the spices in the mixer Grinder to make a powder.
- Take Masala powders for the Gravy.
- Slice the onions.
- Heat the Pan & Take Ghee & mustard oil in it. Add the onions & Ginger Garlic paste to it. Fry it till golden light brown..
- Now add the Mutton stock over it & fry it for 15mins in Medium to low Flame.
- Add slowly all the spices, grinded powder& Curd to it.
- Now cook on low flame for almost 35 mins & cover the pan..
- We need the Mutton to be very Tender. So if the Mutton doesn't become tender Please transfer it to Pressure cooker & cook for more 10 mins..
- Now Mutton Rogan Josh is Ready to be Served..
